Healthy Homemade Granola

Often granola we buy from the supermarket are packed with preservatives and a lot of sugar. I wanted to experiment and make a tasty one that has no added refined sugar and is quick to cook.

Ingredients:

- Gluten free organic rolled oats
- A good glug of olive oil
- Ground Almonds
- Agave nectar/Maple Syrup
- Sultanas/ Raisins
- Pinch of salt (This ingredient is important to bring out the flavour so don't forget!)
Optional - Any nuts such as shredded coconut, flaked almonds, crushed whole almonds, cashews… Anything really!

Recipe:

1) Pre heat the oven to 150 degrees C.

2) Combine all of the ingredients apart from the dried fruit (they will be added later).

3) Line a baking tray with baking paper and lay out the granola mix onto the tray as spread out and even as possible.

4) Bake the granola mix for 20 minutes and then add the dried fruit to the mix. This is because the naturally occurring sugars in the fruit can cause the fruit to catch and burn.

5) Return the whole granola mix to the oven for 5 minutes or until the desired golden brown colour is achieved.

There are many options to accompany your delicious freshly baked granola! For example I have put it on top of a natural yogurt base and added dried mango! You can add fresh strawberries and blueberries or even have it as a cereal with almond/soy milk (gorgeous combination).

The best thing about this granola is that it does keep for up to 3 weeks!! Brilliant if you make a big batch and then all the preparation is done.

Just make sure you always keep the remaining granola in an airtight container!
