Apple and cinnamon is such a good combo (and you know how much I love cinnamon) so I thought a while back it is time to make one that I can enjoy. I have uploaded a photo on Instagram the first time I made this and realised I havent shared the recipe!! Here it is....
Ingredients:
200g gluten free self raising flour
75g butter
100g organic coconut nectar
1/4 teaspoon xantham gum
1-2 teaspoons ground cinnamon
3 dessert apples, peeled and cored (Approx 350g before peeling)
3 eggs, beaten
Instructions:
1) Grease and line with baking paper one large traybake tin or two deep loaf tins and preheat the oven to 180 degrees C.
2) Place flour, xantham gum and butter in a bowl and rub the butter in with your fingers until fine breadcrumb consistancy. Stir in sugar and cinnamon.
3) Dice 2 1/2 apples and stir into the cake mixture along with the eggs. Beat until combined and then pour the mixture into the baking tray or two loaf tins.
4) Thinly slice the remaining half apple and arrange on top of cake mixture for decoration and bake for 40-45 minutes until golden. The cake should be firm to touch in the centre and coming away from the sides.
Tip: I arrange the decoration apple slices in twos so that they mark out even slices when cutting.
5) Allow to cool for 10 minutes then turn out onto wire rack to cool completely then serve!
Cuts into 12 even squares!
