Courgette Fritters

These fritters are my new go to for lunch and dinner! So tasty and go with many other dishes such as houmous and ratatouille. I top my fritters with slices of avocado and a squeeze of lemon and the combination is absolutely delicious! I even love them cold (but others prefer them as a hot meal!).


                          



These are a great vegetarian meal with high levels of protein that you will get from the ground almond and eggs.



Serves 2-3 (makes 6)

Ingredients:

2 courgettes, coarsely grated
2 eggs, lightly beaten
50g shredded spinach leaves
50g ground almonds
1 tsp ground cumin
1/2 tsp ground coriander
1 tbsp coconut oil
Salt and ground pepper


Instructions:


1. Place the grated courgettes in a colander with some salt. Allow it to sit for 10 minutes to release the moisture. Then squeeze dry with your hands.

2. In a bowl mix the courgettes and all the other ingredients except the coconut oil, until combined.

3. In a large non stick frying pan melt the coconut oil on medium heat then add large spoonfuls of the mixture in batches. Use a spatula to gently press down on the mixture to flatten.

4. Cook for 3 minutes on that side then cook on other side for a couple of minutes until golden brown.

5. Repeat until all of the mixture is user up.

6. Serve!
