Speedy meal alert! These scrumptious stack of pancakes only have two main ingredients in them....
Ingredients:
- 1 large banana
- 2 eggs
- Optional: Sprinkle of cinnamon and a couple of drops of vanilla
Recipe:
1) Mash up the banana well until very smooth.
2) Add the two eggs to the banana and any optional flavourings.
3) Ladle some of the mixture into a greased pan (I use coconut oil) and cook equally on both sides until golden brown. Repeat with the rest of the mixture until you have a scrummy stack!
I had previously hand picked some blackberries to add with natural yogurt and a quirt of maple syrup, with a side of my cold pressed carrot juice...
...And, hey presto!
