Sweet potato is so good for you so why not make it into everyone's favourite potato shape- fries! This easy and quick recipe is so great as part of a healthy dinner.

Serves 4 (side dish)
Ingredients:
2 sweet potatoes
2 dsp olive oil
2 tsp sea salt
Instructions:
1) Preheat the oven to 200 degrees.
2) Peel the sweet potatoes and then chop into long 1/2 cm wide fries.
3) Cover a baking tray with silver foil.
4) Add the chopped sweet potato to the baking tray and mix them with the salt and olive oil.
5) Spread on the tray and bake for 20-25 minutes until starting to crisp.
