I am constantly looking for quick and tasty dinner ideas that are not to heavy. I love carrot at the moment and thought how can I mix up the taste and cooking method, instead of the traditional chopped streamed carrots. Enter carrot ribbons!
So easy to do and the same prep time to make the ribbons than the normal steamed vegetables.
Perfect for all of you gluten- free and vegans out there who are looking for an alternative to spaghetti pasta. Here is the recipe!
Ingredients:
4 large carrots
Olive oil
1/2 tsp of rosemary
1/2 tsp of thyme
1/2 tsp of sage
Salt and pepper to taste
Instructions:
1) Preheat oven to 220 degrees C.
2) Peal the carrots. Then using the peeler, cut length ways into ribbons.
3) Transfer the carrot ribbons onto a large baking tray and toss in a small amount of olive oil and add the herbs and seasoning.
4) Oven cook for 6 minutes then toss and cook for a further 5 minutes until ribbons look cooked and edges are starting to crisp (See below photo)
5) Add the topping to your ribbons whether it would be roasted tomatoes and pesto as I have done, your favourite fish/meat, or tomato sauce. Enjoy!
