Avocado Toast

This is such an easy and filling breakfast. For the toast I use Biona bread Quinoa and Amaranth. This bread is great protein so perfect for breakfast.

I use half an avocado and 1 piece of bread as it is so filling but by all means add another half avocado or extra slice of bread.






The trick with the bread is not to actually toast it as it doesn't toast as well as traditional bread does. It is perfect after one minute in the toaster at the last minute when the avocado is prepped.

Scoop the flesh of 1/2 or whole avocado and throw away the stone and skin. 

With a fork mash the avocado to the desired consistancy (I like it with a few lumps left in it). Add a good few drops of lemon juice, salt and pepper to taste.


When the bread is finished toasting, mound the mashed avocado on the toast and top with a few chilli flakes if you wish for an extra kick. 




 You could even top it with a poached egg and cherry tomatoes. If serving a brunch why not add tomato, bacon and a poached egg for an amazing treat for friends and family!
