Cauliflower Pizza Base

I have been meaning to try Cauliflower Pizza for a while now since my friend said how yummy it was. I heard that you cant even taste the difference between a typical pizza crust and this cauliflower crust!

I definitely put this to the test and let me tell you- the rumours are correct!! It is delicious. Try it for yourself now!



Ingredients:

- 1 medium-large cauliflower
- 1 egg
- 1 cup of grated mozzarella
- 1 tbsp oregano
- 1 tbsp grated parmesan
- Pinch of salt and pepper
- Pizza toppings of your choice

Instructions:

1) Preheat oven to 200 degrees C

2) To make cauliflower "rice", pulse cauliflower florets in a food processor until rice-like texture.

3) Fill a large saucepan with an inch of water and bring to boil. Add cauliflower "rice" and let it cook for 5 minutes. Drain well and then let it cool.

4) The most important step is to make sure that all of the excess moisture is squeezed out by wrapping the "rice" in a tea towel and squeeze as hard as you can! (You will be surprised how much liquid comes out!)

5) In a bowl, mix the strained rice, beaten egg, grated mozzarella, parmesan, oregano, salt and pepper.

6) Mix well and turn out onto a baking tray lined with grease proof paper.

7) Shape the dough into a circle to the desired thickness (keeping the edges slightly higher).

8) Bake for 35-40 minutes until the crust is golden brown and firm.

9) Now time to get creative and load on the toppings of your choice!! Sauce, cheese, vegetables, meat, fish etc.... (I grill the pizza after toppings have been put on so that all the cheese is melted and stringy).


 Above is the pizza crust straight from the oven, waiting for the perfect toppings!


The toppings on this pizza, I chose tomato, mozzarella, roasted vegetables and basil!
