I am very excited about this recipe!! Cookie dough is the ultimate indulgence and now it is healthy! Of course this is gluten free and refined sugar free as usual, but this is also suitable for you lovely vegans out there. So simple and quick to make and no baking required! I taste tested these on friends and family and has not been forgotten about so here is the amazing recipe for you all to enjoy...
Ingredients:
35g rolled oats (I use gluten free oats)
100g almond butter (or any nut butter you prefer)
3 tbsp desiccated coconut
3 tbsp cacao nibs (or any roughly chopped nut/choc chips if you prefer)
1 tbsp maple syrup (or any liquid sweetener if you prefer)
Instructions:
Cookie Dough (To make the chocolate click here and it is best you make the chocolate first and refrigerate for 5 minutes before keeping at room temp.)
1) Mix all ingredients until well combined then put in the fridge for 10-15 minutes to set.
2) Line a baking tray with baking paper and then divide the cookie dough into even round balls on the paper.
3) Flatten down to desired thickness (remember one 'bite' will be two cookies with chocolate in the middle so don't make them too big!)
4) If you are making into sandwiches put an even amount of raw chocolate on half of the cookies and sandwich together and eat!
5) If you are not eating immediately they will keep well in the fridge for a couple of days on the baking paper in an airtight container. But also you could freeze them and have frozen cookie dough to enjoy whenever you fancy!
