Delicious Protein Pancakes




 When I first discovered the recipe for healthy pancakes I was shocked at why people still cook them the unhealthy way.
 As a lover of cottage cheese I was thrilled that this was one of the ingredients. This tasty recipe is a perfect sunday brunch feast that can be switched up and has unlimited topping choices!! Will touch on that later. Here is
the simple 4 ingredient recipe... 

Ingredients: 

- 2 eggs 
- 200g cottage cheese 
- 100g rolled oats 
- A few sprinkles of cinnamon 


Recipe: 

1) Add all of the ingredients to a big bowl and whisk (either by hand or using an electric whisk) until the batter is smooth. 

2) Heat a frying pan gently using butter or even better coconut oil and then using a ladle pour some of the mixture into the frying pan and cook on a medium heat turning occasionally until golden brown. 

3) Repeat until you have a lovely stack of gorgeous and tasty pancakes. 


Toppings: 

There are so many toppings that you could use for this below is a few of my suggestions- 
*   Chop up some strawberries and serve with blueberries, natural yogurt and a squirt of agave nectar (breakfast/brunch) 
*   Melt some sugar free chocolate for a chocolate sauce (dessert) 
*   Serve with strawberries and cream. 
*   Serve with pancetta and maple syrup. 
*  Or even turn them savoury (don't add the cinnamon) serve with guacamole and tomato salsa!
