I have had a lot of requests from you lovely people for a flapjack that is high in protein, but still clean and healthy. So I can't let you down and here it is! This tastes amazing and could seriously compete (if not beat) the traditional bakery flapjack that is high in sugar and fat.
With so many different nuts it has the perfect amount of chew in it.
Ingredients:
90g rolled oats
85g finely chopped dried apricots
90g sultanas
85g whole almonds
30g chopped cashew nuts
80g sunflower seed kernels
2 teaspoon ground cinnamon
2 bananas, mashed
1 egg, lightly whisked
1 teaspoon tahini (optional)
Instructions:
1) Preheat the oven to 180 degrees C.
2) Mash the two bananas and then mix in the whisked egg and tahini in one bowl.
3) Add all the dry ingredients into a second bowl and mix until combined and slowly mix in the wet ingredients until well combined.
4) To a shallow baking tray, line with baking paper and then add mixture. Press down until evenly spread and oven bake for 30-35 minutes, until top turns golden.
5) Allow to cool, then cut into even squares. Then transfer squares to wire rack to cool completely individually and store in an airtight container.
