Strawberry and Almond Cake

Summer is a perfect time to use the seasonal fruits into baking! This is a great one to make over a summertime weekend for friends and family.

This cake is gluten and refined sugar free! It tastes so good and is light and moist with the added strawberry. It also freezes very well for you to eat in slices whenever you fancy!



Serves 12


Ingredients:


200g gluten free self raising flour
1 tsp baking powder (gluten free)
50g ground almonds
200g Xylitol/ coconut sugar
350g strawberries
2 eggs
125g plain yogurt
1 tsp almond essence
125g butter
Flaked almonds

Instructions:


1) Preheat the oven to 180 degrees C.

2) Grease a 20cm spring-form baking tin and line with baking paper.

3) Mix the flour, baking powder, almonds, xylitol and a pinch of salt. Then add the strawberries.

4) Next mix the eggs, yogurt, almond essence and melted butter.

5) Carefully stir the wet mixture into the mixed dry ingredients until just combined. Transfer to baking tin (see photo).





6) Bake for 50- 60 minutes, when out of the oven and cooled slightly transfer cake to wire rack and sprinkle on some flaked almonds.

7) When cooled- tuck in!!
